Week 33: Coffee Cake in a Mug

We’ve all been in this position before. You’re home. You want some cake, but you don’t want to deal with the burden of a whole cake lurking in the kitchen. Cupcake? Nahh. Try mug cake! Have you heard of mug cake? A simple Google search or a browse through Pinterest will reveal single serving recipes of carrot cake, chocolate cake, vanilla cake, you name it. 

I started making chocolate mug cakes back when I lived alone and didn’t have a domestic partner to pig out with. I eventually perfected my method and started baking my chocolate “mug” cake in a bowl, which spread out the surface area and resulted in more even baking. Anyway, I’ve wanted to branch out and try other single serving cake recipes and snagged the opportunity on a lazy week.

I found a recipe titled A Cup of Coffee Cake (In Under Five Minutes) from Prudent Baby. The volume though concerned me so I added up the calories of a single serving and it totaled 600. In an effort to be calorie conscious, I cut the ingredients in half. Here is my mise en place.

I followed Jaime’s directions, cutting each ingredient by half. I zapped 1/2 tablespoon of butter in the microwave for a few seconds.

Next I mixed 1 tablespoon of white sugar into the melted butter.

Next I added 2 tablespoons of a beaten egg.

Next I stirred in 1 tablespoon of sour cream, a drop of vanilla, 2 tablespoons flour, and a dash of baking powder.

Then I made the crumb topping, which consisted of 1/2 tablespoon butter, 1 tablespoon flour, 1/2 tablespoon brown sugar, and 1/2 teaspoon of cinnamon. I mixed the topping ingredients together till it made a nice crumble. Once I placed them on top of the batter in the mug, I just felt like it was missing… something. So I searched my pantry to see what I had on hand. Chopped pecans and chocolate chips! Yes. I sprinkled some on top.

I microwaved the “cake” for one minute. The softened chocolate chips on top looked delectable!

This cake was a nice treat, but it did taste a little too egg-y for my liking. Next time I might reduce the egg to 1 tablespoon or none at all.

    Now this is really bad news. I console myself when I NEED cake badly by the thought that if I bake a whole one I’ll have to eat it all(with help for husband) and turn into the side of a barn. Now you’ve solved that problem.
