    My last attempt at an icebox cake didn’t turn out so great. So I wanted a second chance to make a good one. During the summer I researched a lot of icebox cake recipes. The classic icebox cake recipe, on the box of Nabisco Classic Chocolate Wafers package, is a great one. But I’ve done that before. I wanted to do something different. And since it’s the holiday season, I wanted to do something festive. Since cookies are so popular this time of year, why not make a cake out of them? (more…)


  3. Week 41: Italian Ricotta Cheesecake

    This cheesecake will KNOCK YOUR SOCKS OFF. Seriously. I was dying to try a piece after having tasted the batter, but it needed to chill in the fridge overnight in order to set. When I finally sunk my teeth into a slice, I experienced a lot of emotions. I panicked. How would I get through the rest of the day without gobbling up the rest of the cake? What if this 2012 thing was for real? Maybe I should just go for it, right? This cake is so good, it can make you go a little crazy.

  5. Week 39: Butterscotch Cake

    Gosh this Butterscotch Bundt is pretty! This cake started out as a non-chocolate version of the Tunnel of Fudge Cake. But then things went awry and it turned into more of a “ribbon of butterscotch” as opposed to a tunnel. It all turned out okay, more than okay. I’ll explain. (more…)

  7. Week 37: Strawberry Shortcake

    My goodness, is this a gorgeous cake! I’m proud of this one. I’m not a huge fan of strawberry shortcake, but as I’ve mentioned in weeks past, when a friend with a birthday makes a special request, I’m forced to bake outside of my chocolatey, nutty, caramelized box.   8. Week 36: Hurricane Sandy Oatmeal Cake

    I have been dreading writing this post. I baked this cake a few weeks ago on October 28, the day before Hurricane Sandy hit the northeast. I baked while hoarding drinking water and preparing food that could withstand a blackout. I Googled “hurricane cake” to find a recipe fit for the occasion. And it was my hope that I’d post this cake a few days later and make light of a little rain storm that swept through. But that wasn’t the case at all. While myself and those closest to me were largely spared any damage, there are so many still working to rebuild their lives following the storm. It was a very tragic event and I don’t mean to make light of a tragedy by naming a cake after it. (more…)

  10. Week 34: Black Forest Earthquake Cake

    Traditionally this type of cake is called a “dump cake”. I was lamenting to a friend that I couldn’t give my cake such a hideous title and he informed me his mom called this type of cake an “earthquake cake”.
